9/29/23 Friday a.m. w/Raymond

Notes about the shift in general:  It was a good close last night. The shift started with three deferred orders. All orders went out on time. The shift also had a thirty cookie order that depleted the on-hand count, so we had to lower the temperature of the top marsal oven and bake some more cookies. The rest of the shift was steady with good pops. Next shift be on the lookout for: Ranch packets needed for 6 in 1 is not in stock with vendor 1. How many pies did we run on the timesheet? 4/5 2. KMOD stuff: 3. Food stuff: We had to trash two cases of mushrooms due to spoiling. This is an opportunity to look at product mix and the necessary adjustments. 4. Sales for the shift:  $3,326 5. 9/28/23 Thursday a.m. w/Raymond

Notes about the shift in general:  It was a good close. We need to close open the sub/salad station. I arrived early due to Dina and Estela switching shifts. Estela has not been trained to bake bread and cookies so I had to bake them off. Cynthia addressed these kinds of switches with K-mods explaining the impact they have on the day's operation. It did take considerable effort to compensate for the switch. Estela will be trained in baking cookies, bread and croutons. Outside of this one area, Estela is fully versed on all areas of prep. The day started slow. I opened rotoflex with anticipation of hire sales. Having Pedro and Ronaldo on the rotoflex line allowed for assistance with some prep. I ran the marsal and slices. We had a transient man come in and try to take cookies. He was instructed to leave and he did so without further incident. Notes about the shift in general:  it was a pretty straight forward shift. Not a whole lot was happening except for some interesting characters that Ryan had to deal with up front. business was steady and the team was able to get things done. dough finished early and Meredith was able to head home a little early. definitely could have been busier but all things considered it was a good night Next shift be on the lookout for: pears. the pears seem off to me. just keep an eye on them as they're browning slowly   3 differed orders total. one of which is for an investor and is to be ready by 10:45. be ready to push out these deferreds 1.How many pies did we run on the timesheet?  4/5 2. Notes about the shift in general: Shift was slow, i try to keep myself busy, i organized the dough cooler, i did my line check, i send everyone on break around 7, everything was good and well done, i try to keep everyone busy too, Meredith try to came in early but she was gonna hit overtime so i didn't let her, and because it was not a lot to do i let her go around 8, they finished the dough list, they just had to rotated the sicilian thats why i let her go.  Next shift be on the lookout for: i think the first thing in the morning we will need it Ricotta. 1.How many pies did we run on the timesheet?  4/5 5/0 2. Notes about the shift in general:  it was a slow shift and we didnyt have anything by way of pops but things were pretty consistend but slow. after 9 there wasnt much of anything Next shift be on the lookout for: 1.How many pies did we run on the timesheet?  2 across 2. 9/26/23 Tuesday a.m. w/Raymond

Notes about the shift in general:  It was a good close last night. We do need to close to open sub/salad by setting up the station with what the a.m. cook will need to expedite the opening. This will allow the cook to assist with some of the prep or assist dough.  All food labels were checked, and product quality was confirmed. We only had to discard a few items. There were a number of items on the prep list in small quantities for Dina to complete The morning started off well. Pedro and Juan worked well together  on the opening. I spoke with them about a few whole pies that were too blond, and I asked the expo to please keep an eye on that during the shift. We are still having to remind some of the cooks to put out sani buckets, and that should not be an issue at this stage.  It was unusual to see Pedro flustered. 9/25/23 Monday a.m. w/Raymond

Notes about the shift in general:  It was a slow shift, but we were able to get prep completed. When sales were a little slower Juan came back to complete some prep. Leo was able to complete prep items fpr sub salad. We are trying out vacuum sealing oregano to prevent waste. At $12 a pound, we have to find ways to prevent the waste.  Next shift be on the lookout for: Iceberg 1.How many pies did we run on the timesheet?  2/5 2. Notes about the shift in general:  it wasn't busy but it felt like we were in the weeds for like 3 hours. it was nearly impossible to keep up and we ended up pushing a lot of things back to roto and i worked the roto for a bit. lorena split her time with pizza and subs. i wasn't able to lend much help to bailey but he managed to get his list done. breaks didn't get run until 9:30 when things chilled out. i did have meredith come in for 2 hours to get stuff for dessert ready for tomorrow. we did have to block of some time slots to catch up at some point. ryan was helpful with this. Notes about the shift in general:  Pretty slow shift with some nice little pops. Line had to hustle a bit more buy Lana did a good job at helping out the line in boh and I ran slices while she ran breaks.
