11/30/23 Thursday a.m. w/Raymond

Notes about the shift in general:  It was a good closewith all stations cleaned and organized as we continue to look for areas to clean hiding in plain sight . It was a slow day, I am sure hampered by the weather. I covered marsal and Will and Juan covered roto. It was slow and steady I met with the representative from Cintas and he presented a cogent argument regarding the cost savings associated with changing our linen vendor. I will discuss my finding with Cynthia and Ross for their input. It is my opinion that our current uniform service is a privilege that should be reserved for the stores operating with a profitable bottom line. Wednesday 11/29/23 BOH PM Lana

Notes about the shift in general:  it was a consistent shift, wouldnt call it busy though we had a rush or 2 in the beginning. things did slow down and slices picked up after that. Next shift be on the lookout for: vodka sauce should be going out of date tommorrow. i will make more tomorrow for friday 1.How many pies did we run on the timesheet?  4 every 5 2. KMOD stuff: schedule was made today. i did schedule juan and carlos for some training shifts next week. id like to get them cross trained early on. juan carlos in prep and carlos in dish. this will free bailey up for growth and will help out to give us more flexibility with the prep schedule 3. Food stuff: vodka pie is something we need to monitor them on as its new to everyone and putting too much or too little sauce is really easy to do bailey over cooked a number of house pies. we looked and it seemed that the oven was temping low so we might need to look at calibrating marsal. we set it to 600 and it started temping 5...

11/29/23 Wednesday a.m. w/Raymond

Notes about the shift in general :  It was a good close with the areas that Charles pointed out cleaned. It was a slow day even for a Wednesday. The staff worked on the Vodka Pie. The marsal and rotoflex line were both open without increasing staffing. The cooks focused on baking off the Vodka pie.  I contacted the City of Houston Health Department regarding the grease trap insoection. I did not receive the inspector’s report or the final outcome of the testing. I found that no one I contacted at the Health Department could find out anything about the inspections or the inspector that performed the testing. Notes about the shift in general:  Shift was smooth not busy, but it was some pops, for like 30 minutes and it was going back to normal, only one pie on the fly, Salad and subs station was slow, it got only some pops, but nothing crazy, she was able to handle it, i put her to make pizza boxes and she was busy doing that, Bailey was looking for stuff to do, it was not busy for him either, i put him to do the cleaning, all the areas that Charles list it, everything was done, all the sicilians were press and done. Notes about the shift in general:  it was a slower shift. we had an easy set up and meredith was able to finish tirimisu while the dough list got knocked out. estella knocked out a good chunk of prep. i think were missing 2 items on it. Notes about the shift in general:  Shift was slow, not too much going on in the line, it was just a little pup around 6 but it was just for like an hr, we try and we pushed trough, it was no remakes, no overbooking, everything was good, salad station was a little busy too, not too much, today we learned how to make the special sauce for tomorrow, we made some pies for everyone to try, and it was really good, hope tomorrow everything turn on really good. 11/26/23 Sunday p.m. w/Raymond

Notes about the shift in general:  The shift was steady from 4:00 p.m. to 5:00 p.m. and then we had a pop. Sicilians were selling quickly. We started breaks early as soon as the pop slowed down. Pies were coming out on time and looking good. Wendy assisted some of the cooks with their health insurance process. Estela was cut early from prep and the cooks were assigned prep duties during the slower time. 11/27/23 Sunday AM BOH CG

Notes about the shift in general:   Weather was cold and no sun out at all this early morning. Not alot of traffic out either(not  seeing  the big church crowds early like normal). Parking around area not bad at moment as nothing going on. Breakfast Klub seems a bit slower for a Sunday for sure. Picked up a bit right before noon but nothing big. Got a few pies and slices from some families that came in. Still have not seen any church crowd today. Very slow. Wendy got in at noon and she is going to make lemon ice so we will have that in next couple hours ready to go. It has been put on 85 slack line at moment since we are not stocked up on it. Eggplant is still on 85 list as well but we should be able to make it through today with what we have. It will be close though. I also will be in earlier tomorrow and get inventory into spread sheet first thing. I am opening with Ross tomorrow so I am coming in before that to do inventory as Lana is out until tomorrow ...

Notes about the shift in general:  Shift was kinda slow, it wasn't as busy for a Saturday, but it was constant with the thickets, we try to keep our self busy, Lana had to step on prep because we didn't had a prep person tonight, but we were also out on some stuff too, like eggplant and spinach we were able to prep some so we didn't run out, i had to prep some ranch too, but that was it, tomorrow in the morning is going to be a lot of things to prep.
