Wednesday 07/31/2024 BOH PM Lana

  Notes about the shift in general:  it wasn't an ideal shift to walk into. i organized the coolers as well as the upstairs area. then i pulled out the Sicilian in the cooler as we were down to one outside. we had some organizing to do to get the night shift set up but we were able to get things set up within an hour. we had a slower start to the shift but had a good amount of rushes throughout the day. no one got backed up or anything like that. Salads and subs stayed well organized and stocked. we were able to start running breaks at 7 and finish up around 9:30. it was a good day overall. everyone was on top of their stations and we were good with prioritizing. Next shift be on the lookout for: we will need to get more cannoli cream made 1.How many pies did we run on the timesheet?  4 every 5 2. 7/31/24 Wednesday a.m. w/Raymond

Notes about the shift in general: When I arrived the weather was sunny and warm. The parking lot had a few debris. The dumpster was closed with no boxes visible to the public.  When I entered my alarm code the system did not malfunction. None of the GFI’s were tripped and refrigeration units were operating at the correct temperature. It was a good close with all line product moved to the walk-in cooler and coolers cleaned and organized. I had a very productive co with Meagan and Weston about areas of responsibility that I will be  gaining. It was a steady shift with active sales and quite a bit of slices sold. The truck order was entered. All team members were able to take breaks. We are still disbursing prep lists to the staff in an effort to control prep efficiency.   Next shift be on the lookout for: All truck orders are in for tomorrow.  1.How many pies did we run on the timesheet?  4/5 2. TUESDAY 7/30/2024 BOH PM RONALDO

Notes about the shift in general:  Entering my shift, the first thing was to be in the salad bar for two hours because the other shift started at 5 and during those two hours it was very slow so there were some merchandise that needed to be accommodated, I told Pedro to They will also accommodate the soap that arrived a lot today and they just left it there. Pedro also accommodated it if it came out just a little bit of the ticket and I started to check that it was fine on the line and that the sanitizers were changed and I also checked the temperature of the marinade and I tried the dressing that had a good flavor and at about 4 my name was Evelin and she told me that she was going to be about 15 minutes late because there was a lot of traffic and since it was slow I told her that there was no problem and at about 5 o'clock onward s it started. to leave more tickets but in front it was also very slow and I already sent them to their breaks at around 7 and they finished at 8:30 the...

Notes about the shift in general:  Starting my shift, first I was in the salad area because Leticia came in at 5 but it was very slow, there was no ticket so I had to send Juan home at around 3:30 because there was nothing since the morning and while it was slow I started to check the temperature of the marinade and test the dressings, also the pizza sauce and I started with checking the things to prepare and write it down on the list for Juan to do since he is already preparing They came in from the salad and I also gave them a little preparation in the pizza area and when they finished, as it was a little slow, I told them to clean the ceiling because it was very dirty. Notes about the shift in general:  it was a good shift. we had good set up. i worry about tomorrow morning. we don't have a prep person until 4 and we didn't up prep this morning to account for that. For the night we were good. we had a good set up and people jumped into work. We had aces in places tonight. we worked on a consistent basis but got a good 3 or 4 rushes through the night. we got really slow eod and we were able to close up well. salad and sandwich did get slammed at one point and roxana jumped in to help out   Next shift be on the lookout for: some prep items are low. really just check early on and get the 911s out of the way 1.How many pies did we run on the timesheet?  4 every 5 and 5 every 0 2. It was a steady shift with active sales. All truck orders were entered. All team members were able to take breaks. We are still disbursing prep lists to the staff in an effort to control prep efficiency.  There is no prep  person scheduled for tomorrow, so it was a push to add additional prep.  The staff did their best to split their time between line activity and prep.  I picked up milk. I am off tomorrow and we will be ok with what I purchased  until I return. We had one incident where a transient person attempted make off with 4 gallons of floor cleaner. ...

  Notes about the shift in general:   it was a good shift. we had a good start. we all jumped into prep and i made a second small prep list for the items like peperoncini and cherry pepper as we were pretty low on them. we got a good mount done. Leo and i tried to get papers knocked out. juan, pedro and ronaldo all took good care of pizzas. pizza were coming out almost exactly as needed but i had them start putting them out 5 minutes early because we had some pies that came out 3-4 minutes late. it was smooth other than that. we had a good amount of business. didnt quite get busy but it was definitely well paced. we had a rush but only for about an hour and then it got back to consistency. the rest of the shift was good. FRIDAY, JULY 26 2024 BOH PM WENDY

Notes about the shift in general:  Shift was good, times was going faster because we had a pretty busy shift, i had to help Leti for a little bit because she was getting hit with tickets, but i saw how Danilo was about to fall behind of tickets, because the dough was too hard and it was taking a little bit more of time to pound, so had to help him pounding and i had to go to take more dough out because it was really hard and cold, and i ended up finding a 4 day dough softer than the one we were using so we continue using that one, and that was the way we were able to keep up, because the other dough was making us tired so easy, the tickets getting made only with 10 minutes to be ready, but thanks to the change of dough we were able to go back to normal with the 20 minutes, everything was good the rest of the night we didn't had anything on the fly, we didn't had any issues with prep everything was done, we only had to prep some feta because we didn't had any portion, but ev...

  Notes about the shift in general:  it was a good shift. i went heavy on prep first thing in the morning. remember Sunday we have Juan and we have no prep on Monday morning so we need to be working a day ahead on prep. The line finished prep very early on and took care of the line really well. he only had a few items that were out of date but quality was good. most orders came in very early in but BEK showed up mid lunch rush and that one was a bit harder to get moved away. the shift itself started off relatively slow and picked up around 12:30. it was a solid flow of business after that. dough did well and cookies and bread looked great. He knocked out his list pretty well, but i did have to force him to take a break. breaks were done by 1:30. we got things put away. overall a good shift. Next shift be on the lookout for: nothing is crazy just make sure to check prep before the shift. we have a good amount of everything. salad may need to prep more papers. Leo had more prep ...
