FRIDAY 1.24.25 BOH MID WILL
Notes about the shift in general:
Medium until p.m. then busy. Especially heavy from 6pm onward. Breaks are finishing up at 9pm.
Next shift be on the lookout for:
Not enough chocolate chips for Dina to do a batch of cookies, it does look like we'll have enough cookie dough to get to Monday. There is no more good basil, majority was prepped some left for salad/sandwich, but it should come with SOFO tomorrow morning.1.How many pies did we run on the timesheet?
4/52. KMOD stuff:
Maybe not the right place for this but please let's not give Wendy all four line prep lists. She is not Dina or Pedro. A few items off those lists like dressings, washing romaine, ricotta, plus extra prep for the weekend/Monday would be of greater help. Pedro and Juan are more than capable of getting that stuff knocked out if they start on arrival, and we could use Wendy to get ahead on a lot of weekend prep. I organized her prep list in terms of most needed when I arrived, and she pretty much finished each one as it was needed on the line. Instead this all would have been done by 1 or 2pm, but at that time roto crew was busy stocking house pies. If they did not do prep this morning, not sure why house pies were not stocked up either.3. Food stuff:
