THURSDAY 1.23.25 BOH AM WILL
Notes about the shift in general:
Nice Thursday, slightly busier a.m. with a good amount of sandwiches and slices sold during the lunch rush. Looks like its going to be a decent P.M. as well. Used my downtime today to grab milk and anchovies and finish the BOH schedule. I have been trying to gather as much feedback from staff and management as possible to get the schedule in order and run as minimal a crew as possible. They did two bread recipes today to be cooked off tomorrow.
Next shift be on the lookout for:
Bread, ovens in morning.1.How many pies did we run on the timesheet?
4 across the board2. KMOD stuff:
Weekend pars need to go up on croutons (1 on station, 2 on reserve), ranch, pizza tomatoes, spinach, and onions. These have been the p.m. 911s that have been brought to my attention the past two weekends.3. Food stuff:
Sicilians are still not 100% but they are getting better as the day progresses. With today's batch, they should be back to their former glory tomorrow.4. Sales for the shift:
