Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. I communicated with our BEK Hou Rep. regarding the outstanding credits and the missing all beaf pepperoni from our order guide. He was informed that BEK Hou decided to not stock it any longer. That took place with not as much as a "by your leave." I went over this information with Cynthia and she and I will get with Charles. All truck orders were entered and the inventory was completed.


It was a steady shift, but did not have the same sales impact as last Sunday. The week's sales was not as impactful as last week. I believe that the wet cold weather had much to do with the slower sales. The team did very well during the pops. Things really picked up for all stations around 6:00 p.m. I started lunch breaks a little later, but all BOH team members were able to take breaks.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH

Notes about the shift in general:   starting my day entering the restaurant, everything was fine and when we entered we had a lot of merchandise so we started to upload everything and arrange them around 8:30 Houston avocado arrived I checked them and made sure everything was in pretty good quality and I arranged them and gave them a date then I started with the preparation list and delivered it to each station and refilled meanwhile I helped Gerardo with the bread knots when I finished then I helped them with the preparation and around 10 we started with all the pizzas when it opened we didn't have any tickets so I started with the breaks but starting at 11:30 we had an attack of quite a few tickets and we got a ticket for 11 Pizza and others we were in a good movement from 11 until two and from then on it was a little calm so we took advantage of the time to make two Cher Pepper and also finish with the preparation that we had left, already at around three we started to refill De...

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I went to the Ops meeting. I completed the BEK and the Houston Deli truck orders. I was able to get the gallon jug caps item number and they will be ordered on Monday's truck. We thought that we were having another Health Inspection from the City of Houston Health Department, but it was a false alarm. He was just in to place an order. He said we are one of the few places that he trusts to be clean. Raul completed the work on the front door. There are a few small gaps, but it is better than before. I sent pictures to Slack equipment. We had active sales this shift, but it was not very busy. I covered Marsal so that Ramona could go to lunch and help on the Roto line. Break started at 6:45 p.m. and ended at 8:30 p.m. All BOH team members were able to take breaks. TUESDAY 7.8.25 BOH AM WILL

Notes about the shift in general: Recycling was picked up today. It was a better day than yesterday. We started with a 5-pie two family salad deferred and received another similar size order before opening. I helped Pedro get set up for the day. Leti had to leave at 1p.m, so we knocked out breaks as soon as Ronaldo arrived. I started on next week's schedule. Slices were steady all day and there were a few minor pops on salad/sandwich. Dina just finished cooking cheesecakes and they are looking perfect. We should not need to do desserts next week.
