Notes about the shift in general: I picked up milk on the way in. When I arrived the recycle dumpster was closed and locked. I walked the truck order to ensure that all items ordered were received in acceptable condition. I ordered Feta Cheese but we received shredded cheddar. I also found out that our regular SOFO Rep. is no longer with the company. I did not get a call back about replacing the cheese so I sourced it from BEK Hou. We are starting to receive credits from BEK Hou. and we should be caught up soon. A car was towed from our handicap space. The driver was not our guest. The driver parked and walked over to the Breakfast Klub for over 50 minutes. The driver said that I needed to take her to her car and I explained that was not possible.


The shift started off a little slow and the pop happened at approximately 6:30 p.m. I was able to give a break to marsal at 6:30 p.m. and all other breaks had to be delayed. Slice sales were not busy until approximately 7:30 p.m.. I went to the sub/salad station to help and that's when tickets really started to flow. I had to pull Bailey off of the caretaker assignment and put him Marsal and move Ramona to assist Sub/Salad. I stayed on the Roto line to assist with the volume. Breaks were started again and all BOH team members were able to take breaks. The team did very well at all stations and they were tested



Next shift be on the lookout for

Feta, and a few items that will be picked up from BEK Hou. will call

2. KMOD stuff:

K-Mods please walk around and look for things that may be good or things that may need correcting regarding our City of Houston Health inspection. We work to keep a clean, organized store, so we don't want to slip into bad habits. Please post on the Midtown K-mod channel what you have corrected during your walkthrough. 


3. Food stuff:

Sicilians had a good rise and baked off nicely. Dressing were tasted and approved

Notes about the shift in general:   starting my day entering the restaurant, everything was fine and when we entered we had a lot of merchandise so we started to upload everything and arrange them around 8:30 Houston avocado arrived I checked them and made sure everything was in pretty good quality and I arranged them and gave them a date then I started with the preparation list and delivered it to each station and refilled meanwhile I helped Gerardo with the bread knots when I finished then I helped them with the preparation and around 10 we started with all the pizzas when it opened we didn't have any tickets so I started with the breaks but starting at 11:30 we had an attack of quite a few tickets and we got a ticket for 11 Pizza and others we were in a good movement from 11 until two and from then on it was a little calm so we took advantage of the time to make two Cher Pepper and also finish with the preparation that we had left, already at around three we started to refill De...

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I went to the Ops meeting. I completed the BEK and the Houston Deli truck orders. I was able to get the gallon jug caps item number and they will be ordered on Monday's truck. We thought that we were having another Health Inspection from the City of Houston Health Department, but it was a false alarm. He was just in to place an order. He said we are one of the few places that he trusts to be clean. Raul completed the work on the front door. There are a few small gaps, but it is better than before. I sent pictures to Slack equipment. We had active sales this shift, but it was not very busy. I covered Marsal so that Ramona could go to lunch and help on the Roto line. Break started at 6:45 p.m. and ended at 8:30 p.m. All BOH team members were able to take breaks. THURSDAY 4.17.25 BOH AM WILL

Notes about the shift in general: Another solid shift. No deferred orders, but a substantial amount of walk up and tablet orders, all stations were going from the start. 11:15-12:15 was booked solid for pizza. On top of that we had a large group roll up and demolish slices. It stayed busy until about 2pm, at which point it was breaks, finish prep, and some ceiling cleaning for dough team. At 3:30 we started filling up Marsal for the p.m. We cooked 25 cookies this morning, but after the lunch rush it looked low so I cooled the oven and cooked another 10.
