11/28/25 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed but not locked. I Had to replace the lock that was damaged last Wednesday. I spoke with Republic and asked if their driver is damaging our locks. I was informed that we did not receive service this week by Republic, which raised another concern. We should have been serviced twice this week and we did not receive any pickups . I was informed that we will have a pickup today and Saturday. It was a good close on Wednesday with all rail products being moved to the walk-in cooler. We did not have any problems with the equipment during the closer. All refrigeration was at the correct temperature and all ovens fired up. I did not place an order with Sofo as we are stocked until Monday. I sent Juan home before we opened. His forearm and hand were swollen and he could not close his hand. The shift was a little slow after opening and then picked up with a large group on the patio.


Next shift be on the lookout for. 

We did not have deferred orders for today

The sicilians did not rise very well at first. The first cheese and pepperoni were discarded. Our sicilians bake off best when they have at least 6-7 hours of room temperature.  Salad dressings were tasted and approved

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
