Notes about the shift in general: On the way in I picked up thank you bags. When I arrived the dumpster was closed but not locked. I replaced the new lock on the dumpster yesterday and today it is broken again. I am fairly sure that the Republic driver is the person responsible for breaking our locks. I'll have a conversation with Republic on Monday. I can't say with absolute certainty that it was the Republic driver that broke the lock. The parking lot cameras are not useful when the lights go out at 3:00 a.m.
It started as a slow but steady shift. At 7:00 p.m. Marsal picked up and slices started to move. Sub Salad had small pops but it was under control with Leti and Belinda. Roto had pops with small breaks in between. Breaks started at 6:00 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks.
Next shift be on the lookout for.

Sicilians had a really nice rise and the salad dressings were tasted and approved.
I dialed back as much as possible on the truck orders with the lost sales on Thursday.
