Notes about the shift in general:

 Starting my shift, as soon as I walked in, I noticed the padlock on the trash can was broken again. Once inside the restaurant, everything looked pretty good, so I started with the preparation list and handed it out to each station. Then I helped Jose with the bread knots, while Juan and Raymundo were filling pizzas on the line, and right at that moment Houston arrived. I checked everything; it all looked pretty good. Around 10:00, we started making all the pizzas. By 11:00, we had everything ready, and Even also informed me there had been a car accident, which was why he was a little late. When he finally arrived around 11:30, I started the break. The whole team had their break, and in the meantime, we started finishing up some of the preparation. Today was a little slow, but it picked up a bit around 3:00, and we also started filling a lot of pizzas for the front. Juan and Raymundo. They stayed a little longer since the others didn't start until 4:30, so I checked everything to make sure nothing was missing today and to finish my shift




Next shift be on the lookout for:


The only thing that might be missing is Rice Krispy, but we've got that to start the day, and keep an eye out for the Parmesan Raymond. Keep an eye out for everything else. We're doing pretty well.

The Sicilian pizzas look pretty great today, they've grown so much. The pizza slices came out crispy, and the dressing and pizza sauce were approved.

Notes about the shift in general:  When I arrived I checked the recycle Bini and it was closed and locked. When I entered the building I checked the truck orders.. I then placed the Houston Deli order. I made a trip over to the storage unit to relocate 21 oz. cups to the store as a precaution. I went over quality concerns with our Sofo and PFG Reps. The shift was not very busy. Breaks started at 6:00 p.m. and ended at 7:45 p.m. All BOH team members were able to take a break. Next shift be on the lookout for 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: K-Mods, I know we have new team members just out of training. A quick look at our financials for last week shows that we are trending up on "Our Bad" comps. Let's focus on this and identify how to reduce these errors.  I noticed that a few of our house pie's par bake is a little over-baked. and a few areas of the crust is too thin.
