Notes about the shift in general:

Today we received deliveries from BEK, Houston Deli, and Houston Avocado. We started off the day with a 8 pizza/party salad/25 x12" sub deferred order, and had another 12 pie ticket roll in just after. I went over the order with Josh when he arrived. No issues. Diligent was early for once. After that slices were moving with little pops throughout the day. Heavy pepperoni day: beef and Sicilian pep were selling well. Folks are definitely rolling into town for Rodeo and Spring Break.


Next shift be on the lookout for:

The only thing that I can see us running low on this weekend is mayo. If needed I'll run tomorrow.

I went over the salad/sub ticket rail with Belinda.

I told Cynthia about the dish candidate that we have coming in tomorrow.

I went over the week's happenings with Ronaldo.

3. Food stuff:

First pies of the day were a little too bubbly, likely because they made them ahead of deferred order. I tossed more slices than usual, but by noon they were coming out much better. Sicilian proof was great. Produce continues to look better. The house dressing on the line tasted a little off and was tossed in favor of today's.

8. Repair issues:

HIS came out to install a second sensor on the ice machine. The optical sensor it comes with is aimed on one of the sides where the ice slopes down and doesn't get triggered even though the chute fills. His solution was to install a second temperature sensor closer to the chute.
