4/27/26 Monday AM w/Raymond
Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store and checked supplies. It was a good close with all areas clean and organized. I picked up a turkey to get us through until the truck tomorrow. It wasn't a very busy shift, but the flow was consistent. Breaks started at 12:00 p.m. and all team members were able to take breaks. I went over the sicilian prep process with the team. I am heading to pick up more romaine tomatoes for tomorrow.

2. KMOD stuff:
* Please continue to challenge PAR bake on the house pies and Roto pies.
* FOH please go over the deferred order with the k-mods
3. Food stuff:
* Sicilian pies had a very nice rise and baked off very well
* Whole pies were looking very nice.
* Salad dressings were tasted and approved.
* The Hal's chips that are passed Best By date have been removed
* Houston Avocado delivered the replacement romaine. Two cases was sent back due to quality.

6. How did you show love? I gave Geraldo a verbal high five for closely monitoring sicilian prep.
Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH. Very good execution by our front line.
