Notes about the shift in general:
The day started off quite well—a very good beginning. We spent the morning wrapping up prep work, and by around 3:00 PM, we began stocking up on pizzas; the pace picked up further at 4:00 PM, when the afternoon shift arrived. I took the opportunity to place the Houston Avocado order for tomorrow and also spent some time organizing the walk-in cooler. Things were a bit slow initially; Danilo cleaned the vegetable section of the walk-in, and the team prepped some Cherry Peppers. It started getting a little busier around 5:00 PM, and then really picked up around 6:00 PM. I began coordinating the breaks, ensuring that everyone on the team got their time off. Finally, I double-checked to make sure nothing was missing for the evening ahead. That is how I wrapped up my shift.

The Sicilian pizza turned out quite well. The slices are crispy, and the dressing and pizza sauce have a very good texture.
