5/28/26 Thursday Mid w/Raymond
Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store and checked inventory. I then confirmed BEK and Houston Deli orders. I worked on the training material for the Shift Leads who will soon be selected. The meeting is scheduled for tomorrow. The shift was a little slow with small pops. During slow sales Danilo and Gabino detailed the stairs and the Roto area. Breaks started at 6:00 p.m. and ended at 7:30 p.m. All team members were able to take breaks.
The countdown to the World Cup is on, starting with Germany vs Curacao June 14th. We are aware that the World Cup will bring significant activity to the Houston market. I am reviewing staffing and dough prep to ensure we are ready for the increased sales. I spoke to Cynthia and plan to contact a few hotels a few weeks before the big event to let them know that Franks Pizza is not the only pie game in town.

* Sicilian pies had a nice rise, and a light taste.

6. How did you show love? I gave Leo a verbal high five for cleaning the stained ceiling tiles over Roto.
Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.
