Notes about the shift in general:

 The start of the shift went quite well. There was a large backlog of tickets, so once we cleared those, we began some prep work. Later, we ran into an issue with the water and had to wait for it to be fixed; in the meantime, we took the opportunity to prepare more pizzas for the front counter. The afternoon crew arrived, and I worked on the Houston order—prepping avocados for tomorrow—and organized the vegetable walk-in cooler, clearing out empty boxes. Alex was working with Ramona at the front, selling pizza slices; he’s doing a great job. I was supervising—he knows everything well enough that Ramona even left him alone at the front for a while, during which he took the initiative to chop lettuce for salads. Things were a bit slow, and the team started prepping more sandwich wraps. Meanwhile, the pizza station was getting a steady stream of tickets. I also had some orders lined up for the evening, and starting at 6:00 PM, I began scheduling breaks for the entire team. Later, Ramona asked if she could leave around 8:00 PM, since it was quiet and Alex has become quite capable. I agreed, and I also asked Danilo to help out at the front if needed. I checked everything, and everything is in order.

The Sicilian-style pizza looks spectacular; it’s very appealing, as are the individual pizza slices. The dressings and pizza sauces are also very flavorful.

Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I stopped to pick up tomatoes due to the sharp increase in pricing. I walked the store and checked supplies before placing the BEK truck order for tomorrow. I called Republic again regarding their not picking up recycling. I was informed that one of their drivers called off and that impacted a number of routes. They will pick up tomorrow. I called our Houston Avocado Rep and we discussed price corrections on tomatoes and when we could expect to see them. At this time they anticipate that pricing should get back to market norms in 1-2 weeks. In the meanwhile, I will continue to purchase 4X5 tomatoes from HEB at significant cost savings. The shift started slow and then picked up at 6:00 p.m. Both the Roto and Marsal lines did well during the pop.   Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I walked the store and confirmed inventory and placed PFG and BEK  truck orders.  I worked on the new shift lead training program. Father's Day was busier this year. Last year we ended at Net $8,748, we are current at Net $12,010. The shift started slow but then picked up slightly from 6:30 p.m. to 8:30 p.m. Bresks started 6:30 p.m. and ended at 8:00 p.m. All team members were able to take breaks.  The World Cup tomorrow: The accident on the transit line that caused bus routes to fill in, could have impacted our sales.  Next shift be on the lookout for:  Volume pops during the day. 1.   Next shift be on the lookout for: Notes about the shift in general:  it was a day to say the least. i spent the opening doing a lot of paperwork, because of this, i was not able to do a lot by way of set up. they did fall behind on making house pies. we had pies in the window for open but no back ups. the 10:45 order, pushed them back a bit, but we worked on getting the other pies made. Pedro did well keeping up on roto and will handled marsal well, and helped out on roto when he could. Once I finished with inventory I started running breaks. We had a pretty steady flow of business. Stayed relatively slow. I put Leo on some cleaning tasks and he did a bit of prep on his station. The shift stayed relatively slow after that.
