TUESDAY 10/27/2026 BOH AM RONALDO
Notes about the shift in general:
At the start of my shift, everything was in good shape. I completed the prep list. I also prepared two bread recipes, and we added an extra dough recipe to get ready for the upcoming holiday season. We spent time restocking the make-line. We also had a large order for 13 pizzas, as well as a large salad order for a party. From 10:00 AM on, we focused on getting all the pizzas ready for the front counter; the large order went out on time, and by 11:00 AM, everything was set. I also coordinated the breaks—the whole team took their scheduled breaks. It was a fairly steady day; orders were coming in, though not constantly. The team finished up some prep work, and Dina made some cheesecakes, which turned out very well. By the time the afternoon crew arrived, everything was ready. I also placed the order for avocados from Houston for tomorrow and double-checked everything—everything is in order.
Next shift be on the lookout for:

3. Food stuff:
The Sicilian-style pizzas still need a bit more time to rise, but by late afternoon they’re looking quite good. The pizza slices turned out crispy, and the dressings and pizza sauce have a really great flavor.
