TUESDAY 11/3/2026 BOH AM RONALDO
Notes about the shift in general:
Starting my day, everything looked good and clean upon my arrival. I began by making a prep list, and we restocked the line. We started prep early, focusing on pizzas for the front-of-house—we made a large quantity to be ready, as we’ll be giving away slices of pepperoni, cheese, and Margherita pizza. We also had an order for seven pizzas due at 11:35 AM, followed by another 10 pizzas for 12:10 PM. I began coordinating breaks, ensuring the whole team got theirs. We sold a good number of pizzas and sandwiches, but then it started to rain, which slowed things down a bit; however, the front-of-house remained busy. We prepared plenty of pizzas to ensure the front was well-stocked. It was busier in the front than in the back—around 3:00 PM, no new orders were coming into the kitchen, but the front was still active. I took advantage of this downtime and asked Pedro to help me assemble a new rack for the dishwashing area—the one used to hold containers. We put it together and swapped it out for the old one; it turned out great. Afterward, we prepped a bit more pizza to stay ahead. I also used the time to place the order for avocados for tomorrow and double-checked that everything was in order.
