7/31/23 Monday p.m. w/Raymond

Notes about the shift in general:Clise  It was a slow steady shift with a small pop. I was able to spend most of the time on the rotoflex line and still spend time with the prep and marsal team. We had three fly pies due to missed toppings and over cooked. We had plenty provolone on hand for the shift. Stela did very well on the sicilian dough press and I am looking for a good rise for the morning. I followed up with Bailey's dough prep and they did better. With the heat advisory for the rest of the week, I don't believe there will be many brave souls wanting to sit on the patio. We had a nice pop at close with pizzas, anti-pastas and subs. Everything went out promptly.  Overall it was a calm stress free night. Next shift be on the lookout for: 1.How many pies did we run on the timesheet?  5/5 and 4/0 2. 7/31/23 MONDAY BOH AM CG

Notes about the shift in general:   Very slow shift. No big orders. No pops. Guys on line cleaned and portioned  out  items for the line. Looking at it Monday -Wed we could probably open with just two instead of three in back. That would mean the opening Kmod would have to be able to pound and top or run marsal but we need to look at losing or moving one from the line. If we do that we need to keep our am prep on those days. If we do keep them on line then we will need to lose our prep in am and have dough come in earlier to bake off bread and cookies. Just something we need to keep thinking about. WE currently can not make too many moves right this week as Lana leaves on vacation and we have other staff members in the next few weeks taking time off but we are looking at how we can lose one more in am and how to utilize marsal area as well.  Next shift be on the lookout for: Sicilian dough and the bake off. 7/30/23 Sunday p.m. w/ Raymond

Notes about the shift in general:   This blog covers from 1p.m. -10p.m. The shift started off fsirly slow and then picked up around 5p.m.. Marsal was steady with sales. I had the opportunity to assist FOH with running slices due to the volume of slice ordrs. Leti was overwhelmed at sub/salad so I jumped in to give her a hand. We were able to keep up with the volume. Whole pies were moving very well at rotoflex. The rotoflex did have four fly pies due to over bake, miss topping and size being to small. Our new pounder Joshua is learning our process very quickly. The prep list wasn't very large. Dina was able to plow through most of the list before she was cut. Meredith had a large dough make list. She jumped in and banged the list out. When Bailey came in the dish area was backed up, but he was able to get caught up quickly. We are still doing well with the medium boxes are BEK Rep. Brian found for us. The print quality on some of our pizza boxes is still not resolved at this time. ...

SATURDAY 07/29/2023 BOH PM WENDY

Notes about the shift in general:  Tonight was a good night we had 2 orders one was at 5:30 with 4 sicilians everything went really good, and another one at 7 with 9 pies that went out really good the only thing it was a little confusion because on the thicket said 7:00, 7:30 delivery and they though that the order was suppose to be ready at 7:30 but we had time to have everything on time at 7, after that was done we started get busy i had to step on help Jordan, we were good on times nothing on the fly no overbookings everything was going really smooth, around 9:30 Joshua ask to leave early and because we start to get a little slow i let him go, everyone were already done with their breaks around that time. 7/28/23 Friday BOH AM CG

Notes about the shift in general:   Very slow shift. Did have a 15 pie order call in so that was a nice order to get. Seemed like the station that popped the most was salad and sandwich station during lunch.  Next shift be on the lookout for: Watch Ana as I feel she is not moving fast on prep as she is capable of and is more interested in flirting back in the back. With us looking at making moves on shedules I bring this up as if I had to let someone go today it would be her as far as who still is on the prep team. She it seems is not taking her job as seriously as she should. I did monitor prep yesterday and compared to other team members she is becoming how Joel got before we had to let him go. THURDAYS 7/27/2023 BOH PM WENDY

Notes about the shift in general:  Another good night, it was a little busy i like it, It was some moments that we didn't had anything, but the rest of the night was good, in the slow moments we took the time to clean and organized some stuff i took my time to organized the medicine and all those things from the door and do the list of supplies we need, we clean the filter from the ice machine, and Josh clean and organized the dough cooler and will organized and clean the produce cooler, everything was good tonight just some thickets with no time, but that was it, everything else was good a good night for the team. What was needed? Any item that we did not prep enough of? What time did we start running out? Thursday 7/27/23 AM CG BOH

Notes about the shift in general:   Very very slow shift. Got breaks done and out of way. Had one small order to start with 6 pies but never picked up.  Next shift be on the lookout for: Be on look out for  Sicilians  still. Took a bit longer for them to rise but they got there. Bake off was good not great but good rise and good taste! nice and crisp bottom and just oh so yummy.  Also be on look out for cucumbers being too thin. Some are pushing it. We need to just have another talk with prep and make sure we are cutting it at a 2 on the slicer. Should be about 1/16 of an inch. if you can see through it throw it out!  1.How many pies did we run on the timesheet?  5/5 2. Notes about the shift in general:  Pretty good night. Tonight was a really good night for a Wednesday hope all of our week days start being more like that, we started to start getting busy at 5 pm we had a overbooking by 4 and a sicilian on the next time slot but after that everything gas going good, will was here so he handle it good, around 10:30 we got busy with slices we had to make a sicilian on the fly and 3 pep pie but we were good too we had a great team.  Meredith was here making tiramisu, but  some of them were not good cause the mix got so watering, so we throw away the ones that were not good, and we are gonna see tomorrow how that other ones turn out, but while she was doing that the timer for the sicilians went off and nobody rotate the sicilians, so i had to go it hope tomorrow they look really good.
