4/30/25 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bun was closed and locked. I picked up water cups on the way in. When I entered I completed the PFG truck order. I met with the Gordons Market Rep as we move toward adding them as a distributor. Cynthia and I went over a few final details of the box lunch launch. I met with Will and we discussed the upcoming box lunches, We also discussed the closing floor cleaning process. They are currently using too much water on the floors on the BOH. The shift was steady but not overly busy. Breaks started at 6:30 p.m. and ended at 8 p.m. Next shift be on the lookout for The PFG truck order. TUESDAY 4/29/2025 BOH PM RONALDO

Notes about the shift in general:   Starting my day, the whole team was working very well, and I was also supervising Savannah since today was her first day and she did quite well. I only helped her with a few things, she did the rest on her own. I was already stretching when the afternoon team arrived. I told Evelin to go make an Italian dressing since there was only one left, while I was in the salad area when she finished, I went to the cold room, arranged the vegetables, and threw away the empty boxes from there, I made the Houston Avocado order for tomorrow when I finished, I started with the breaks around six she was covering each one of them, they left a ticket and they finished around 7:40 I arrived, I checked that everything was okay for tonight and that's how I finished my shift Next shift be on the lookout for: We are pretty good, we have everything we need to start tomorrow's tone 1.How many pies did we run on the timesheet?  4/5 2. 4/29/25 Tuesday AM w/Raymon

Notes about the shift in general:  When I arrived the recycle bin was closed but not locked. The entire block experienced a power outage. The power returned at approximately 8:15 a.m. All equipment and temperatures were checked. The whole pie warmer did not turn on. The day was not very busy. All BOH team members were able to take a break. Savannah did her first solo on sub/salad and she did well. With a little more time she will only get better at that station. Notes about the shift in general:   I started the day a little slowly, but we took advantage of the time to fill up on pizza in front of us and I also cut a Rice Krispy kiosk when I finished. I started with the breaks around six, and I was covering for everyone who came in if there was a ticket as well as for the salad, and also in front of us they managed to finish around eight. Then I checked that everything would be okay for tonight. So my day was pretty calm today. MONDAY 4.28.25 BOH AM WILL

Notes about the shift in general: Received deliveries from BEK x2, PFG, SOFO, and Houston Avocado. Sent back one case of overripe Roma tomatoes. Had one broken ricotta old fashion that I added to the credit tracker. Helped with garlic knots and house pies. It was a slow Monday and with Ronaldo I had one more than I normally would so we took advantage and cleaned the stairwell, the floors of the veggie cooler, detailed roto, cleaned the bottom of Marsal, cleaned the rack in the hallway, cleaned the pizza warmers. Most of this was Pedro as Ronaldo and I covered stations, Ronaldo cleaned the veggie cooler. I also started next week's schedule. Also rotated bread, fixed dates, got rid of a mountain of boxes. 4/27/25 Sunday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. When I entered I placed truck orders for BEK SA, BEK Hou., SOFO and PFG. It was a steady shift with our highest sales at 6:00 p.m.. I covered the Marsal, Sub/Salad and Roto lines during breaks. Breaks started at 6:45 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. The houseless were very active in the area. The security guard from Seal Security responded to a call for assistance when a man threatened Ryan with a bottle. Notes about the shift in general:   When I started my shift everything was pretty good and the trash container was locked first, I started the preparation list and delivered them to each area Then we started to refill with Juan when finished, we started with the preparation and around 10 we started with all the pizzas in front, and when it opened we only had a ticket for two pizzas for 11:15 from there I took advantage of the time to start with the breaks around 11:30 and we managed to finish around 1, we already had a ticket for 2:50 for nine pizzas and another for 3:50, also for 10 pizzas so we started to refill in front and Evelin had to leave at three and Letisia came in until four, but I told her to come in an hour earlier and since we had enough tickets and there was nobody at the station while I was for the rest of my shift in the oven, it was quite good, there was a lot of movement and around 4:30 I made an order for Houston avocara to morning and so was my aunt, she was pr...

SATURDAY 4/26/2025 BOH PM RONALDO

Notes about the shift in general:   Starting my shift, we had quite a few pizzas. I had two tickets, and in total there were about 28 pizzas, and the Sicilian ones were also quite takeout, so we took advantage of the time to fill everything up front. I started with the breaks around six and they ended around 7:45, but the tickets kept coming out, both for the salad and the one up front. We also had a ticket for 9:30, out of 18, so I helped them a little by filling it up front so as not to have any problems with the big ticket. It was quite busy tonight, but the whole team worked quite well and with spectacular coordination. Notes about the shift in general: Steady Saturday with a good crew. All stations saw a little action but nothing crazy. Time slots past 5pm have been filling up all day, so we made sure marsal was completely stocked before p.m. staff came on.  1.How many pies did we run on the timesheet?  4 across the board 2. Food stuff: Sicilians were a little slim this morning so I popped them over by the water heater and that did the trick, they sold themselves all day long. House pies were great, Leo's pounding skills are really coming along. Dressings tasted as good as they get. Knots were good. Notes about the shift in general:   starting my shift I was in the Flex wheel since Pedro had to leave early today because he had a problem with his son and when the afternoon guys arrived I was covering pizzas and we also had a ticket for 16 pizzas for 5:30 and another six pizzas for 6:00 so we took advantage of the time to make a lot of pizzas for the front and the big ticket came out on time and of the best quality and around six I started with the breaks covering each one of them and they managed to finish around 7:30 then I made the Houston Avocara order for tomorrow then I was checking and reviewing what things could be missing but everything was pretty good we have everything for tonight and we also have very good equipment for the night and at the end of my shift I was arranging in the cold room since tomorrow more things will arrive to have more space and throw away the boxes and that's how my shift was it was pretty good very good coordination Next shift be on the lookout...

Notes about the shift in general: Chill Friday. Started the day with a 9 pie deferred and receiving shipments from all vendors. Everything looked good and stock levels look good heading into the weekend. I helped with knots, bought the crew some more instant coffee, organized and de-boxed, and made sure they are as prepped up as possible for the weekend. Steady day on all stations. 4/24/25 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. I placed the Houston Deli order. We are still using Molina hard salami for now. There is no definite time when Bianco hard salami will start shipping again. Cynthia and I were discussing putting together our crash kit and soon after that we had a partial power outage that only gave reduced power. We spoke to the operator of the cherry picker down the street and he did not think the work he was doing had anything to do with the outage. I then went to Breakfast Klub and they did not have power interruption. I checked with Spicy Girl restaurant and was not impacted by the power outage. I went around the corner and checked with Taco A GoGo and they were experiencing the same power outage. They informed me that they were informed that it was a planned outage that was only supposed to last until 2:00 p.m. Cynthia and took precautionary measures to shut down some units at the electrical box and some...
