10/31/24 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived I started the truck orders. BEK SA, BEK Houston, SOFO and Houston Avocado was called in or entered. I'll picked up more Parmesan Reggiano tomorrow. The tow signs for the main entrance gas been posted by A Wrecker. We just need to post the on-lot signs and remove the old signs. We are set for the roll-out tomorrow. Pine nuts need to be roasted in the a.mm. The shift started busy and stayed busy until 9:30 a.m. Cynthia stayed over to help out during the start of the rush. I went to the store to purchase more romaine. The sales whipped out what we hadđź‘Ź At 4% labor you can tell it was very busy. Breaks did not stat until 8:30 p.m. It was very good that we had Juan Carlos and Meredith, the volume required it. Next shift be on the lookout for  Parmesan Reggiano, we will need more for Sunday. WEDNESDAY 10.30.24 BOH AM WILL

Notes about the shift in general: Good day. Busy day. Felt like the main focus was just keeping pepperoni house pies stocked for free voting slices. Decent amount of to go pies and salad/sandwich as well. Received both BEK deliveries and produce. Had the dough crew stock up for the weekend. Charles came down and showed us the vodka pie and the kale salad, I just showed PM crew how to make them. We will do it again tomorrow. CG: Came in at 10:30am and took over marsal so that Will and the guys in back could handle the large orders and orders coming in and also run breaks. Marsal was steady from 11:30ish til 2:30/3pm. Went through alot of pep and cheese slices. Saw ALOT of voting slices. Guys did great job on getting pies out on time and making sure that I stayed stocked in marsal. Then around 4pm we started stocking up marsal again for pm. Once we had it stocked I ran marsal from 6p-6:30p so that Ramona could take break and thankfully I did as when she got back it started! Notes about the shift in general:   Starting my shift I was in front selling pizza slices while the other shift came in at five when they came in I started making the Sicilian since Meredith was making tiramisu and didn't have time to do that and I helped her also I was washing the dishes so it wouldn't pile up and when I finished I went to help cover pizzas and at that time I was getting quite a few tickets and around seven I sent them to their break but in that time there was a lot of work but everyone had a break and we finished around 9:30 then it calmed down a little so I was cleaning where the tomatoes for sandwiches are kept and I also cleaned where the sauces are kept it was quite dirty finishing there I cut Rice Crispy because it was running out and when I finished I went to help those in making more pizzas and that was it on my shift for today there was a lot of work in front, a lot was sold and that was it Next shift be on the lookout for: As for merchandise, we only...

10/29/24 Tuesday AM w/Raymond

Notes about the shift in general:  When I arrived i started on the prep lists and dough prep list. I then entered the BEK SA and BEK Houston truck order. I also completed the PFG order for Thursday. As soon as that was completed I went to cover marsal until 2:30 p.m. Pedro took over marsal and I went to Specs and HEB for items needed for the roll-out. When I returned I completed the Produce truck order We were selling slices like they were free. Roto had a few good pops with whole pies. All BOH team members were able to take breaks. I communicated with our produce rep regarding our kale order and she is working on it. I also communicated with A Wrecker Service and they will be out tonight to hang their signs. MONDAY 10/28/2024 BOH PM RONALDO

Notes about the shift in general:   Starting my shift when I arrived I had a little chat with Raymond and he told me that when he opened in the morning there was no preparation so he called Bernandina to come and do preparation since there was nothing to start the day and then I started my routine I went in front selling slices of pizza until the other shift arrived at five then I went back and started to stretch pizza all night until 11 and then around seven I asked Juan Carlos to help me with the breaks and to stop preparing for a moment and we all took a break and we finished around 9:30 from there there were quite a few pizzas but in front a lot of pizza slices were sold there was very good sales and around 10 it was a little slow so I went to arrange the merchandise the tomatoes and lettuce what arrived today I arranged everything finishing there then I returned to my work area and that's how today's shift was it was pretty good but everything went very well Next shift be ...

10/28/24 Monday AM w/Raymond

Notes about the shift in general:  When I arrived I worked on prep lists. We were significantly behind in prep. I had to call Dina in to help us catch up. I went to HEB to try and get one more ham until tomorrow, but they were completely out. Marsal is where most of the action was. All available space in marsal had slices. All team members were able to take breaks. All trucks came in, and BEK SA was out of Semi Sweet Chocolate Chips. 10/27/24 Sunday Mid w/Raymond

Notes about the shift in general:  First and foremost, Shout out to Will and Ronaldo for handling the booty wompin they took the last two days. Their efforts allowed me to slay other dragons. Thank you Sir Will and Senor Ronaldo! The day started with me dealing with the Boars Head ham embargo. I communicated with Charles and he is working on his end to assist us. I am expecting a delivery of ham on Tuesday if all goes well. All trucks were entered. All day the team was handling large orders. I kept Evelin to assist with prep that we just could not get to due to our sales volume. The labor and sales speak for itself. Our team does not see areas of responsibility. They only see opportunity and accomplishment. All BOH were able to take breaks. I am going to have to looks at staffing on Fridays, Saturdays and Sundays. 10/26/24 Saturday Mid w/Raymond

Notes about the shift in general:  Due to sales , I need to pick up a few item from will call. When I arrived I started to work on Sundays truck order. The truck order for SOFO was submitted. I the walked the store looking any shortages. I checked with Ronaldo to how things were going and he was on top of things. I turned my attention to prep and the quality of the produce order. Dina worked and completed extra produce. I completed my figure 8 for BOH and found a few items in the dough cooler that needed to be FIFO correctly. We still have 3 halves of ham for tomorrow. I am going to have to execute a real Machiavellian move tomorrow to get my hands on more ham. We should have more ham on Tuesday, so the concern is for Monday. : The shift was very busy and all stations were hit pretty hard until 8:30 p.m. We had one over booking around the Texans' large order. Notes about the shift in general:   starting my shift when I came in everything was closed all the things were in their place where I put the trash can in its place from there I made the preparation list then I helped them do a lot of preparation so that nothing was missing during the night we made a lot of Pizza when it opened it was a little quiet then work started around 12:00 but we have a ticket for 18 pizzas by one and at that time it didn't stop so I was in front and a lot of Slices came out but in the end everything went very well and then I sent them on their breaks and everyone took a break as did I and it was a very hard day because there was a lot of work but everything went very well and that was my shift for today Next shift be on the lookout for: I did everything necessary so that I wouldn't miss out on the evening. 10/25/24 Friday Mid w/Raymond

Notes about the shift in general:  It was a busy day. When I arrived I met with the owner o A wrecker Towing to sign the agreement. He and I walked the lot and went over a few things. They may need video footage of the offender violating the posted notice for court. Whenever your vehicle is towed, you have a right to a day in court. This may be a rear occasion as they will try to take pictures of the violations. I had to strong arm HEB to get Boars head ham. I called HEBs asking for the low sodium Boars Head ham with no success. I found the number one HEB store in Houston. I called their deli and told them that I wanted to purchase two whole hams. I was told no by the deli worker, so I asked to speak to the Deli Manager and he said sorry I can't.. I then asked for the GM, and he also said "Sorry we can't" I explained to the GM that I am not trying to be one of those customers, but I need the product. Notes about the shift in general:   Starting my shift when I entered the restaurant everything was pretty good the door was well closed and all the things were in their place and the lights were all off it is pretty good I made the preparation list and from there I helped Gerardo with the bread knots then I helped them with the pizzas from there the merchandise arrived I began to bring everything up and arrange it while they were making the pizzas and I arranged all the merchandise arrived only the cheese was missing for Miyano because they said they didn't have it and that one was not charged that one was pending when we opened around 11 there was a lot of work and I was in front and when I could around two I sent them to their break but we had a lot of preparation but we managed to do everything and all that they went to their break and today was a very good day but everything went pretty well Next shift be on the lookout for: We did everything we needed to prepare for tonight, s...
