MONDAY 3/31/2025 BOH PM RONALDO

Notes about the shift in general:   I started my shift I was in the salad area it was a little slow and around 3:20 Juan told me that he felt a little sick and to leave early since it was a little slow I said yes we were like that me and Leo too Will until the other shift at 4. From there we started filling up Pizza in front while I cooked and they sold pizza slices and Meredith was working on desserts which is tiramisu one night it was pretty good around 7 and not even with the break and I asked Carlos as a favor to help me stay in front while I sent the others and we managed to finish around 9. From there it was a little quiet while I was in front the rest of the night a Monday pretty good and all the pizzas came out perfectly and that was my shift for today Next shift be on the lookout for: Well, the only thing missing tomorrow is provolone. 3/30/25 Sunday Mid w/Raymond

Notes about the shift in general: When I arrived the recycle bin was closed and locked. When I entered the building I started on the truck orders. All truck orders were entered and confirmed. I picked up Boars head ham and provolone to get through the next day. I added Evan's Food Handlers Certificate to 7Shift. I created and printed the produce PARs for Ronaldo. I will contact Cozzini for a replacement rocker knife. I contacted EcoLab to make arrangements for the technician to pick up the key and alarm code. I contacted WasteWater Transport Services regarding our scheduled grease trap service. I left a message for someone to call me back. It was a steady shift with a few good pops. I relieved Juan Carlos at Marsal so that he could take care of some needed prep. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. SUNDAY 3/30/2025 BOH AM RONALDO

Notes about the shift in general:   Starting my shift with a cloudy day when I entered the restaurant everything was pretty good I started by making the preparation list we were also filling in the line with Juan then around 10 we started with the pizzas we made quite a lot since we have a ticket for 20 pizzas for 12:30 already when it opened they told us that the ticket for 20 pizzas was wanted at 11:50 so we were stretching out the pizzas and we cooked them and it came out on time and then they told us they wanted another five more in total it was 25 pizzas and very great teamwork all the pizzas came out on time and well cooked and around 12 I started with the break and we managed to finish around 2 from there we were filling in Pizza in front and I was selling slices of pizza and around 3:30 I placed the order for Houston avocado for tomorrow a day with a lot of work but all thanks to the team that I have that could handle everything Next shift be on the lookout for: The only th...

Notes about the shift in general:   Starting my day when I entered the restaurant everything was pretty good first I made the entire preparation list and delivered it to each area there I helped fill the line and we also started with the preparation since it was a lot and around 10 we started with the pizzas when it opened it was a little calm so we were finishing what is the red chili also what is the ricotta and there at around 11:30 and I started with the break and around 1:30 we finished with the break so finishing with the rest of the preparation that we had pending meanwhile if pizzas came out then it got really slow so Juan had to leave at 2:35 meanwhile we filled what we could in front since they had a large ticket for 4:30 and it went on like that until the end of my shift Next shift be on the lookout for: Today we did enough preparation so that nothing is missing and to have it a little for tomorrow 1.How many pies did we run on the timesheet?  4/5 2. Notes about the shift in general: Busy shift. We were all moving all day. We tested out sandwich cut in 6 for the art car parade with Raymond. They did a ton of prep in the morning but I still had to prep romaine, cherry peppers, mushrooms on the fly. We need to raise weekend pars on romaine and diced romas. Gerardo trained Savannah today, he said she is good on everything except balling the dough, which should just take reps. 1.How many pies did we run on the timesheet?  4 across the board 3. Notes about the shift in general:   starting my day it was a little cloudy already entering the restaurant upon entering everything was pretty good there was already merchandise so I started to organize and upload everything then I made the preparation list I delivered it to each area I was checking all the merchandise was in good condition and they sent four Brazil but the one that was at the bottom had nothing it was just an empty box so I took a picture and sent it to Raymond and he called and told them from there I was checking everything else Pedro and Juan were filling in the line while I was arranging everything and throwing away the empty boxes and around 10 we started with the pizzas when it opened Will arrived and around 11:30 the Basil arrived which was needed in the morning they left it at that time we started the day quite well a lot of sandwiches came out when it calmed down a bit I took advantage of sending during their break everyone went and we managed to finish at...

3/27/25 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. When I entered I checked the truck order and reorganized some of the shelves. I then placed the Deli order. After the deli order I placed the SOFO order long with the BEK SA and BEK Hou. orders. I called EcoLAb and requested a copy of the invoice. During my conversation with EcoLab, we discussed giving them access to the store after all staff members have left. They want to find where the pests are nesting by their activity when it is dark and there is no activity in the store. Notes about the shift in general: Astros game tonight had people out today. The lunch rush kept going until 4pm, lots of slices and sandwiches, and more to go pies in the a.m. than usual. On top of that there was a good deal of prep to do. We didn't start breaks until almost 3pm, but got them knocked out quickly. I only had enough downtime to finish the schedule on my break. Cooked off and made 2 more bread recipes. I finished croutons and cookies to help the dough team. Ordered produce. 3/26/25 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. There was no debris in the parking lot. When I entered the store I checked the truck order. Will informed me that two bags of powdered sugar were open and the content spilled in the box. I contacted BEK and informed them of the situation and a credit will be processed. I was informed by Mettler that the gutters on the roof needed to be cleaned out. I asked Bailey to place this on his Caretaker list for Friday. I placed the PFG truck order for Thursday. Andrew Fowler really did a great job on deep cleaning the restroom. Will assigned the task of cleaning the ceiling tiles to Juan and Pedro and they did a great job. I adjusted the hot water flow in the hand sink and it seems to be much more tolerable. We are working on the needs list for our participation in the Car Show event. WEDNESDAY 3.26.25 BOH AM WILL

Notes about the shift in general: Solid close. Definitely a slower week. Today we put away trucks from PFG, Houston Avocado, and BEK x2. Dough team cooked off and made 2 bread recipes. I told Juan and Pedro that it since it was a slow shift to work on the ceiling tiles, they did a fantastic job. I started next week's schedule and worked on rotating side work calendar. Notes about the shift in general:   starting my shift I was in salad while Letisia was in front selling Slices since I was a little slow I took advantage of my time to order Houston avocado and then when I finished I was stretching Pizza and filling in front then Evelin called me that I was arriving a little late since she had a flat tire since I was slow there were no problems when she arrived it was a little calmer around five I took advantage of the time I told Gabino to clean the roof since it was quite dirty and yellow we managed to clean a part only half left we didn't succeed since there had been quite a few tickets and we stopped cleaning and around seven I started with the break and we managed to finish around nine and I also told Bailey to help me a little in front since Evan left at eight from there I was in front selling slices of pizza until closing and around 10 they were slow so I took advantage of it we went to take out the trash to move forward with the cleaning le...

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. There was no debris in the parking lot, just some leaves. When I entered the alarm was set. It was a good close with all areas cleaned and organized. All refrigeration was at the correct temperature. I completed the prep lists and place them at the work stations. The truck order was entered for BEK Hou and BEK SA. It was a slow shift but there were enough sales to help keep things busy. All BOH team members were able to take breaks.
