FRIDAY 1.24.25 BOH MID WILL

Notes about the shift in general: Medium until p.m. then busy. Especially heavy from 6pm onward. Breaks are finishing up at 9pm. Next shift be on the lookout for: Not enough chocolate chips for Dina to do a batch of cookies, it does look like we'll have enough cookie dough to get to Monday. There is no more good basil, majority was prepped some left for salad/sandwich, but it should come with SOFO tomorrow morning.  1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: Maybe not the right place for this but please let's not give Wendy all four line prep lists. She is not Dina or Pedro. A few items off those lists like dressings, washing romaine, ricotta, plus extra prep for the weekend/Monday would be of greater help. Pedro and Juan are more than  capable of getting that stuff knocked out if they start on arrival, and we could use Wendy to get ahead on a lot of weekend prep. I organized her prep list in terms of most needed when I arrived, and she pretty much f...

1/24/25 Friday AM w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed and there were no boxes. It was a good close all areas were cleaned and organized. There was one shelf in the roto area that could use detailing. The coolers were well organized. I prepared the prep lists and gave them to the prep team. I placed the SOFO truck order and confirmed receipt. The truck order was FIFO'd in. I assisted Gerardo with a double bake off of sub bread and cookies. The Alsco linen driver arrived soon after the last sub bread and cookies were in the oven. I spoke with the Alsco Rep and I identified potential cost savings that I will look into. It was a slow start that picked up with a good pop. Next shift be on the lookout for SOFO truck order on Saturday 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: 3. Food stuff: Sicilians had a good rise and baked off nicely. Dressing were tasted and approved 4. Sales for the shift: $3,259 5. Labor for the shift:  20% Pe...

1/22/25 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived I went to the Ops meeting. After the Ops meeting I started on the BEK truck order. Produce order was placed. I covered Marsal for the a.m. breaks. The p.m. shift was busy with steady orders. Breaks started at 6:00 p.m. and ended at 8:30 p.m. The team did well to manage tickets. Our BEK Rep. came by and delivered the rebate check. I placed it on Cynthia's desk. Payroll checks were not in the safe. I sent a request for a tracking number for the checks. An update was sent to the team via 7Shift regarding the checks. Next shift be on the lookout for We will receive 3 cases of 6 in 1 and 2 cases of Sauce Basil on the truck tomorrow. They will not be on the invoice. They are a gesture of good will from Kraft-Heinz 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: 3. Food stuff: Sicilians had a good rise and baked off nicely. Dressing were tasted and approved 4. Sales for the shift: $3,722 5. Labor for the shift:  ...

THURSDAY 1.23.25 BOH AM WILL

Notes about the shift in general: Nice Thursday, slightly busier a.m. with a good amount of sandwiches and slices sold during the lunch rush. Looks like its going to be a decent P.M. as well. Used my downtime today to grab milk and anchovies and finish the BOH schedule. I have been trying to gather as much feedback from staff and management as possible to get the schedule in order and run as minimal a crew as possible. They did two bread recipes today to be cooked off tomorrow. Next shift be on the lookout for: Bread, ovens in morning.  1.How many pies did we run on the timesheet?  4 across the board 2. KMOD stuff: Weekend pars need to go up on croutons (1 on station, 2 on reserve), ranch, pizza tomatoes, spinach, and onions. These have been the p.m. 911s that have been brought to my attention the past two weekends. 3. Food stuff: Sicilians are still not 100% but they are getting better as the day progresses. With today's batch, they should be back to their former glory tomorr...

1/22/25 Wednesday Mid w/Raymond

Notes about the shift in general:  The day started very early. I made a=contact with opening staff to check on their situation concerning the road conditions. We had one cook unable to make it in due to road conditions. I sent a dough plan to the staff to recover from the closer and short operational days. I am pleased to say that the team did not let me down and followed the dough plan without deviation We were able to avoid 86ing subs by recovering from our sub bread shortage. We were able to bake same day sub bread dough without sacrificing quality. The shift was busy and slices were selling quickly. I covered marsal and Ramona assisted with topping. Both the marsal and roto lines had heavy pops. All of the BOH cooks were able to take breaks. Next shift be on the lookout for: 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: The k-mod schedule has been drafted and it is ready for Cynthia's review 3. Food stuff: Sicilians had a ruff start. The disruption cau...

SUNDAY 1/19/2025 BOH AM RONALDO

Notes about the shift in general:   When we came in, everything was pretty good. We were doing a lot of preparation because yesterday there was a very good sale and there was nothing. At 10 we made all the pizzas. With Cynthia's help, it was a little easier because that way we were able to move forward with the preparation. At about 11:30 I sent them off on their break and everyone went and there was a lot of work. We were filling in everything that was missing in preparation and also quite a few pizzas in front, since today there are only three of us. We made quite a lot of pizza because today is going to be a busy day. Next shift be on the lookout for: Well, there are only a few things missing, like lettuce for the salad, and today Raymond said to make two Sicilians, so tomorrow it will be double. 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: 3. Food stuff: All the pizzas came out pretty good, the Sicilian grew quite well, the pizza sauce and the dressings...
