11/30/25 Sunday Mid w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed but not locked. I will replace the lock tomorrow. I will give Republic a call and identify the cause of all the locks needing to be replaced. Will and I went over the BEK truck order. Will completed the BEK order without my shadowing and he did well. I gave the order, the once over and very little changes were made. CG and I went over large orders and salad split plate orders. We will provide additional information in Ops. Cynthia sent a follow-up inquiry regarding the large order for tomorrow at 4:00 p.m.. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. SUNDAY 11.30.25 BOH AM WILL

Notes about the shift in general: Standard issue Sunday: no deferred orders, slow start, but steady throughout the day. Lots of prep for all departments, but everyone got it done quickly. I supported the floor until breaks were done. I conferred with Raymond, then did the BEK order. After that I compared produce prices for the week, submitted tomorrow's order, and did BOH inventory. Next shift be on the lookout for: Large delivery from BEK. Check produce quality from HA 1.How many pies did we run on the timesheet?  4 3. Food stuff: Siclian's were looking flat this morning. Continued proofing next to an open warmer, first slice pies needed a corner cut out. Made new ones at noon that came out much nicer. 11/29/25 Saturday Mid w/Raymond

Notes about the shift in general:  On the way in I picked up thank you bags. When I arrived the dumpster was closed but not locked. I replaced the new lock on the dumpster yesterday and today it is broken again. I am fairly sure that the Republic driver is the person responsible for breaking our locks. I'll have a conversation with Republic on Monday. I can't say with absolute certainty that it was the Republic driver that broke the lock. The parking lot cameras are not useful when the lights go out at 3:00 a.m. It started as a slow but steady shift. At 7:00 p.m. Marsal picked up and slices started to move. Sub Salad had small pops but it was under control with Leti and Belinda. Roto had pops with small breaks in between. Breaks started at 6:00 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. SATURDAY 11/29/2025 BOH AM RONALDO

Notes about the shift in general:   Starting my shift, as soon as I walked in, I noticed the padlock on the trash can was broken again. Once inside the restaurant, everything looked pretty good, so I started with the preparation list and handed it out to each station. Then I helped Jose with the bread knots, while Juan and Raymundo were filling pizzas on the line, and right at that moment Houston arrived. I checked everything; it all looked pretty good. Around 10:00, we started making all the pizzas. By 11:00, we had everything ready, and Even also informed me there had been a car accident, which was why he was a little late. When he finally arrived around 11:30, I started the break. The whole team had their break, and in the meantime, we started finishing up some of the preparation. FRIDAY 11/28/2025 BOH PM RONALDO

Notes about the shift in general:   Starting the day, we focused on getting everything ready since Juan had to leave today because he hurt his hand and couldn't work. Raymond's help selling pizza slices made our job a little easier. Around 3:00, Ramona texted me saying she couldn't come in because of a serious problem. I told Raymond, and we agreed that Carlos would work the front desk, and Belinda would cover the counter. When the afternoon shift arrived, I took my break, and when I came downstairs, I started preparing the Houston avocado order for tomorrow. Then I helped cover the counter around 5:00. Things got really busy; we were selling a lot of takeout pizzas, sandwiches, and salads. We were also selling pizza slices for the front desk. Around 6:00, I started covering for everyone on their breaks. Whoever came on at that time was busier, but it was great teamwork. We kept track of all the tickets and finished the break around 8:20. 11/28/25 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed but not locked. I Had to replace the lock that was damaged last Wednesday. I spoke with Republic and asked if their driver is damaging our locks. I was informed that we did not receive service this week by Republic, which raised another concern. We should have been serviced twice this week and we did not receive any pickups . I was informed that we will have a pickup today and Saturday. It was a good close on Wednesday with all rail products being moved to the walk-in cooler. We did not have any problems with the equipment during the closer. All refrigeration was at the correct temperature and all ovens fired up. I did not place an order with Sofo as we are stocked until Monday. I sent Juan home before we opened. His forearm and hand were swollen and he could not close his hand. The shift was a little slow after opening and then picked up with a large group on the patio. Next shift be on the lookout for....

11/26/25 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed and the lock was beat-up pretty bad. I narrowed it down to the Republic driver damaging the lock. I have a call into their office about the lock. When I entered I started the PFG order immediately. Their cut off was 11:00 a.m. I then entered the BEK order. I followed up on vendor credits and communicated with Delmy regarding the outcome. I completed and posted the K-Mod's schedule. The BOH schedule was completed by Will and published. I have been unable to get a satisfactory response regarding Boar's Head grated Romano. I contacted the corporate office and I was informed that the product has been recalled and there is no eta on if or when it will return. Will and I completed the shift hand off and everything was set up for success. The shift was not as busy as last night. WEDNESDAY 11.26.25 BOH AM WILL

Notes about the shift in general: Day time was very steady: no real pops, just a constant trickle for all stations. Tablet orders are starting to come in for the 4:30-6pm block. I used my downtime to finalize the schedule, place a produce order for Friday, and organize all areas. I made sure stations and prep are good for tonight. TUESDAY 11/25/2025 BOH PM RONALDO

Notes about the shift in general:   Starting our shift today, things went pretty well. We were always busy, and when the afternoon shift arrived, I took my break. When I came downstairs, I placed an order for a Houston avocado pizza for tomorrow. Things were a little quiet after that, so we made a cherry pepper pizza. Around 5:00, things got really busy; we were selling a lot of pizzas, so I started helping out. Around 6:00, when the afternoon break started, things got busier. The salad bar was also selling a lot of sandwiches, but we had Lety working extra today, so there were no problems. All the tickets were processed on time, and the whole team took their break. Then I started checking to make sure nothing was missing for tonight, and we also restocked the front counter a little more since it was selling well. Notes about the shift in general:   The shift started quite slowly, which meant Juan had to leave early. We were on the line, but it was still too slow, so there were no problems. When the afternoon shift arrived, I took my break. When I went downstairs, I saw it was a bit slow, so I started taking all the lids off the containers where we store the seeds. I had Meredith wash everything, and around four o'clock it started to pick up a bit. We also started filling pizzas for the front, and around five o'clock it started to improve even more. So I started wrapping pizzas, and around six o'clock I started taking breaks. That time was also very good. We were selling a lot of takeout pizzas, and the whole team took their break. MONDAY 11.24.25 BOH AM WILL

Notes about the shift in general: Lots to put away this AM, as we ordered up for the week. Spent the morning making sure everything was organized and accounted for. One busted tub of Galbani ricotta added to the credit tracker. We cut Juan at 2pm as there was no significant rush. Slices stayed steady all day. I had Leo clean the outside of his oven and made sure he included portioning dressings as part of having his station ready. Dough make was heavy in anticipation of closure. No produce was ordered for tomorrow, we will be good without it. Next shift be on the lookout for: Rush refrigeration should be out to fix the produce cooler gasket.  They are coming by to do maintenance on roto at 11PM tomorrow, I let the team know how to leave the oven in preparation. 1.How many pies did we run on the timesheet?  4 3.
