11/30/22 Raymond

 • First and foremost, thanks to our brothers and sisters in Sauce from Austin.  Their support and encouragement was greatly appreciated.  I was able to take a number of value added notes • It was a good day. We conducted time testing. The a.m. team performed well, and salad/subs had one late ticket.  • The p.m. shift also kept up with time trial tickets but they were not pushed as hard as the a.m. team. Time trials will continue tomorrow and p.m. team will be the focus tomorrow.  • I returned a case of romaine to Hardies due to poor quality • On a sad note, Cynthia Motton, BOH manager's sister past away today. Please keep her in your thoughts.

Midtown BOH]11/29/2022 Kaylana-Cynthia  M People:  Overall the team worked really well together today despite not having water readily available. At the start of my shift Chris Informed me that he was feeling feverish and felt like he needed a break, after discussing it with Kaylana it was decided to let him leave early. Evan did well with assisting Kaylana and I with panning cheesecakes. Roxana and jordy responded positively to direction from me today which was great to see. Thanks to Kaylana, Evan, Bailey and Jordy for staying later to help out with finishing up cheesecakes. Islay is coming in early tomorrow to help with prep since Wendy will be assisting Mettler with orientation  We have 4 people coming to orientation  Product:  We ran short on provolone today.  AM: Everyone showed up this morning except Michelle. She needs to be taken off schedule and we are going to have to part ways with her as we can not accommodate her second job as if she is on schedule she needs to be here. I have Dez on prep today as there are quite a few on pizza line due to marsal being closed this morning. I have 3 every 5 staged on pizza line from 10:30am-12pm. At noon I will have them break and then another round of timed tickets. I set up tickets for salad sandwich station as well but gave them 15 minutes between tickets as tickets generally do not come thru like crazy on this station like they do with pizza line. We had 22 logs of provolone going into Wednesday and with Thursday off we went through a lot of provolone for 3 days. We need to make sure they are not mixing up the two as we have not gone through that much mozzarella for us to be going through more provolone. • Today the slicer was relocated to a cart where it will be maintained at all times, thanks to Ross and Metler.  • The new mixer was also installed by Ross and Metler, but there seems to be a problem with the connection of the attachments to the mixer.   I will get with the team and get this resolved before opening. • We receive feedback from Jen on the dessert tasting.  The tiramisu tested fine, but there’s still work to be done on the cookies. • The cook Joshua came into work and was visibly unable to work due his condition.  He staggered when he walked, his speech was clearly labored and he seemed very incoherent. I asked him to come to the office to speak with me before he started to work.   Kaylana was present for the conversation when I informed him that it was my opinion that he was unable to safely work.  I instructed Joshua to clock out and report back to me tomorrow.  • Time evaluations was conducted on rotoflex, mersa...

 • We was a tasting for Tiramisu and cookies.  Jen is reviewing the quality of the cookies and will provide instructions for the final product.  We were instructed to not freeze the cookie dough • Team members were moved around to different stations to provide them additional exposure to other areas. Bailey  asked to be assigned to the English-speaking section of the kitchen. I reviewed diversity and inclusion with him to help him understand that we are one team. • Gambino is one of our newest team members and he has picked up roto flex quickly.  • The produce orders has been placed and we will be fully stocked with tomorrow's truck. • We interviewed a number of applicants and they are very promising • I followed up on sandwich wrapping and they are doing much better. • All prep lists were completed

• Robil: Is one of our best on roto flex  and he is doing very well assisting with training of the new staff members • Silvia skills are getting stronger every day or on Mersal • Gonzalo's pounding and is strong. He needs more time on toppings • Lorena, Tamara and Roxana: They  Did very well and the post shift review of all pizza types • Chris left early not feeling well.  • Jordy is aware that he needs to follow the Sicilian adjusted recipe left by Eric. . The dough he prepared to tonight was spot on. • Jordan is doing very well on salads and subs. We will need to ensure the right size sandwich rapping paper is on the station. The rapping process needs to be critique closely. • We will need to provide Liannet with hands on direction on salad and subs.  AM: Myke called in as he is not feeling well. We should be okay as today we are not going to make dough as it would be 3 day on Thursday which we are closed so today we will be focusing on prep and making sure we get some detail cleaning assignments done. We moved the two shelves in dry storage yesterday and made room for carts. Got all dry storage on one shelf in boh. We will see how that works for us. We did move dessert dry goods up stairs. We are also going to utilize mixer for desserts as well so we can get those done today or tomorrow. We are going to push roto line and practice and rotate marsals through area to do slices up front for practice. Sofo did bring in mozzarella and feta cheese this morning as well. I put in BEK and PFG order for tomorrow already as well and made sure to order what the front of house asked for (topo Chico and Maine root lemon lime bib). People:  Today Roxanna had to reminded to reminded twice not to  have drinks at her station, next time she was warned that she would be sent home. Tamera showed great team spirit today on dish, we were short a person on pm and she jumped  in without even being asked to. Gambino is catching on really quickly on roto and Gongzalo is doing great on pounding. There was an incident today with Chris's car it is believed that someone tried to break in to it. Overall the team is progressing. Product:  We finished Sicilian. It looks really good. Its being left out tonight so that its ready to go tomorrow. We finished 2 batches of garlic knots as it didn't look that great, but we wanted to have some done  for production tomorrow. We got provolone in today, the pepperoni came in smaller bags because they were out of the the regar size. People:Am: everyone showed up in the am staff. They practiced the 7 pizzas on the line and then I ran tickets through the line. Afterwards we went through the pizzas which are harder for them which are the white pies and the sausage ricotta. Pizza line did well. Salad and sandwich did well today. Everything looking really good coming out. Prep team did great with staying busy.  Estalla trained on dough. She made one of each dough excluding pan torta. She's a good place holder until we find a replacement for Kevin. Bailey helped clear out the racks downstairs and relocate upstairs Roxana needs to get out of the habit of having people do things for her.  Gambino caught on really fast to roto and I think he's going to be a great addition. Kevin is no longer working with us though we should reach out to let him know that he can pick up his last check Friday as we will not be here Thursday Product:  Dough was made.  • The friends and family event went well we received a number of compliments on food quality and service. The staff was very excited and said that our product will be even better when we open.  Morale is very high. • 23 checks were voided and all management and team members are clocked out •   We will continue to review the onstage performance for the team members working at mersal. • Hand washing, cleanliness, an organization was the topic of review for today • Fowler discussed some operational processes that he will review and think over and get back with the team on • The team is getting better at closing in one hour • Overall this was a very exciting day and everyone is very excited about the upcoming opening.

11/19/22 BOH Kaylana-Raymond

People:  I plugged mario in to cover Mike's off days and the salad girls off days. He replaced Sara's schedule  Dez didn't show to his shift. I called him and he said that hir car "didn't have wind shield wipers" so he ended up having his sister bring him but he worked the pm shift. Lorena came in to work a mid shift and she was very helpful in training Chris has food poisoning and had to call in I had to sit down with jordy about not playing around at work so much but also listening and communicating with others. Specifically listening to Wendy and Cynthia M. Product:  the bread needs to be put in the fridge only after it is risen. Otherwise it's difficult to cook before the others get there in the morning. Jose made good use of the  hot box We had to throw out 3 bags of shallots because they were all really moldy.  Am: Everyone showed up on the am crew except for Sara. I reached out and she let me know that she wanted to be moved to prep and not be on salad sandwich. I let her know that we would move her to that station but not showing up is not the way to do that and that she needs to understand that we are trying to shuffle around existing and newer staff into the correct places and that we could do that move. We moved Josh to dish as Z2 is going to be too much for him as is the pizza line. We are going to see how he is on dish this week. We did not set up marsal this morning and only ran slices. We need to really think about where everyone should be. I am going to look at this tomorrow and get with Kaylana and see what is the best groups to put together at this point. Only item we are missing is the lady fingers which I spoke with Brian about. He said that he would go buy them himself and bring them to us but I let him know that I am going to see about finding them myself as well and gett...

People: -chris is pretty good on subs. Long run he might be a good person to cover breaks now he's trained a little on 3 stations. -team worked together well together to close. If like them to get used to helping other stations when they're done. Product: - We need to get pm salad used to Prepping items. They got sauces ready for tomorrow but they need to prep cheeses and other things. That being said I need morning not to prep one day so that they can prep some. -Sicilian was forgotten about. Islay and I were able to get it pressed in time so that it got 3 whole hours. -we need to make sure we're Prepping fresh mozzarella. They prepped some in the line today. I'm going to get with prep about this. They also just need to start communicating with prep for those things.  Procedures:  -We ran breaks today successfully. A few people at a time. They do need to make sure they're talking to a Manger before going on break. I don't think we should be running group breaks...

People:  -Jordan will be traveling for him grandmother's funeral. He will be back Wednesday  -i changes Roxana's schedule for Thursday off. -chris shows interest in salad -Rubil showed frustration as he feels that he's carrying a lot of weight on last minute cleans at night.  -wendy called out -silvia was able to clock in but I had to adjust her hours for today. Rolando also I needed to adjust hours -breaks are an on going battle. I sent 2 people on break off of roto and I came back to find they all went on break. I want to get them in the habit of one person at a time breaks. They will have to get used to it. Product: -merideth is good about checking dates when she comes in. I told her to make sure that we are checking with a manager before throwing things out -we were successful with tiramisu. It's just a matter of soaking the ladyfingers a bit longer -we may be low on broccoli tomorrow. I didn't check the order for produce but I think we'll be fine without it...

11/15/22

 AM: Everyone showed up this morning. We only had the line in back open and kept marsal closed down so we could utilize ovens for baking off our cheesecakes. We ran 3 toppers, 1 pounder and 2 on roto and we sent through 3 every 5 tickets. They kept up for most part but they need to give themselves more time to prep up pies and work on being faster on toppings. Will and Jose did okay working together on roto. They had good communication but they still need to get use to having someone put in pies and being able to keep up with the pies as well. We will continue working on that this week. Produce cooler has been organized and threw out any bad produce. Did BEK and PFG and Hardies order but did not do SOFO as we do not need anything from them til Friday. Hardies produce came today and mushrooms looks thinner and much nicer. I did also get an uncut case to see how long and what us cutting them looks like since the thickness of mushrooms has been an issue last two weeks. Green bells fro...

 Today we did a couple of doughs for pies and also knocked out cheesecake prep and tiramisu's. We also had our orders come in so we got those up. Cynthia M. got to go over desserts for her training. We are going to also do desserts all together again next week as well. Only having one Hobart is going to be hard to get this all done with everything else we utilize mixer with but we are looking at ways to utilize as much shelf life on product and when we start the overnight desserts that will help but getting mozzarella and provolone and carrots done we are trying to figure it when it works best to do. 
11/12/22 • A big thank you to Eric for his assistance. It was greatly appreciated.  • During the all team member BOH meeting, our dear cook Leticia Juarez gave a heartfelt thank you to Home Slice Pizza for the privilege of working for the company. There were a few watery eyes in the room when she was finished.  • Focus attention was given to dough to ensure that we start to looking at the needed volume for opening. • Prep and dough prep was working together as a team and accomplished much. • The BOH team sounds vey anxious about our family and friends soft opening. • Closings are getting better. • We have our new iPad for Extra Chef. • Hired two more team members today. • Team morale was very high. • Salad and sub presentation is coming along nicely. • The Roto Flex was detailed and the semolina was removed from the bottom tier. FRIDAY 11/11

11/11/22  AM SHIFT: Today we had a Tasting from 12pm-2pm. I am typing up the notes and will have them in the midtown main folder as soon as those are done. Lots of good feedback. We dropped the ball with calzone dough and spinach for today. We were all so focused on Sicilian dough as that has been the dough that has been the toughest for us and we totally did not think about it. We will moving forward be making sure calzone dough gets done. As far as spinach we did cook a case yesterday but that only yields such a small amount that we are going to take that par up and make sure we have that as well. After the tasting I had talks with the stations about what the issues were and what the wins were. We still have work to do but our staff has the want to get better and they are progressing so I am not worried that we will get there. We do need to push times hard this next week though. They need to feel it when its 3 every 5 so we are going to start with 2 every five and then push to 3....

11/10/22 BOH P.M. Cynthia- Kaylana

People:  Merideth stayed to help out as we were short on people. Tomorrow she is going to work 4 to 9 only and saturdayb she will also work a partial shift. moved Chris over to pizzas had hoped back and forth but it was okay. He picked up quick.  Estalla went home early because of a family emergency, I do not know that she will need special accommodations.Someone should check with her tomorrow  Jordan and Jon both left early as they were both sick. Note a bug going around Product- Sicilian was good today. Kevin made another batch.  We made our first round of lemon ices and put them away. We made the base for the chocolate. Cynthia will finish it tomorrow.  Bread is looking better but we have to stop letting them use bad bread so they can start filtering out what can and can't be used for service. We're low on dough. I think we should utilize Tomorrow for catching up. Procedure:  We are definitely going have to clean inside the rotoflex more than once a week...

People:  👉🏾I had to have a final, I will send you home chat with everyone today. I'm gonna stay form in it. 👉🏾Jirdan is a real team player. He helps out where ever needed 👉🏾I hired a Herman Bailey. I'm waiting on information for orientation. Tomorrow we should get together about new hires 👉🏾Jordy seems to not have a care for general rules. He gets frustrated when we correct him. 👉🏾estalla shows real promise in having some leadership in prep. She directs well and is picking up in things that need to be made and how much. She's keeping us stocked for sure. Product: 👉🏾We are in desperate need of basil. If possible someone can stop in for some tomorrow. I wouldn't have a problem doing so. Nov 8 2022 pm

People:  👉🏾Ryan worked for an hour before he parted ways with us.  👉🏾Josh seems a bit shy to actually touch things. I think he'll do well once he finds his place in the kitchen. Tried him on roto today. Tomorrow a bit of topping and roto.  👉🏾The salad and pizza station are getting really good at working as a team. With the line down Evelyn, salad immediately jumped in and helped Closing down and with whatever they could.  👉🏾Jordy shows frustration with not being able to do things the way he knows how Product:  👉🏾We were 85d bread. People: Kevin showed some frustration today. I need to get him into the habit of letting people help with dish. Jordy also need to understand that he is training for dish. He has been focused on prep but his next shift, I want him on dish and I want Kevin to pull off a bit.Linda did not show up to her shift today(NCLS). I had to tell Meriwether and Kevin that we can not be showing PDA at work. It is something I think we will have to have an actual conversation with them about. Product: We have 2 recipes of pizza sauce that were made without bail. We will have to add basil to them next shift. The salad are coming out more consistent with both groups. Cynthia put in a order for produce to arrive Tuesday. I had salad get rid of some stuff that wouldn't last until Tuesday. Procedures: Closing down is taking a bit longer then it should. Nov 4th PM

 People: everyone is doing great in training. All the new hires are on 7 shifts and have access to their schedules. Islay and Estela are getting great at seeking things out to prep. I would like to get them in the habit of that for pm shifts. They do have concerns about not getting a full 40 hours. Roxana and Jordan are a dream team. They work so amazingly together and there is not the slightest bit of miscommunication between them even with the language barrier. It's very impressive. Even is picking up pounding really well. Cynthia and I got with ms.linda regarding moving her to prep. She's not happy about it at all. We explained to her that we do think she'd just thrive better there but she made it a point to let us know she was unhappy. Product: I stopped in to get the Roma tomatoes and we were low on basil for the day. Towards the end of the day it didn't seem to be a problem. The Sicilian wasn't left out last night so it took a while to rise,  so they were able...

11/3/22 BOH TRAINING

      Raymond opened and had prep lists done and I had lefts tagged tickets at the stations so that they had targets to hit on pizza line and salad/sandwich line. Raymond worked with dough a lot and has been very hands on as we narrow down what temp and amount of water we should be using due to humidity and just weather issues that we experience in Houston area. We made three different batches of Sicilian to see which is going to work best. We know with Eric coming next week we will be where we need to be with his expertise in this area :) Taste is there just needs to rise about almost a half inch more. We have made progress on this though which is good to see. We are also playing with hydration of our dough for pies as well. We have multiple batches going with a decrease of 1oz of water per batch to see which is going to work best for us as well. We will continue until we find what works best for us during certain times with our weather. Raymond stuck around for a b...

11/2/22

 Today we all attended the HR meeting and every manger was in attendance. Alma did a great job! We then went down to boh and started getting ice bases made and then rolled out garlic knots so that we have those ready for tomorrow. We also started getting on Sicilian since we are gonna delay cheesecakes and tiramisu until freezer is working right. There is a sensor that is off and it won't allow it to keep it cold enough to keep those frozen desserts in. The bases we can utilize Mettler small freezer we have here to put those in until freezer is up but still small amount. We worked on dough mostly as this is our main big focus at this time. Just made sure we had items for desserts which only rum is missing but I will grab this week. We worked out a few different alternations to dough recipes as with our humidity it will fluctuate. 

11/1/22 BOH TRAINING

 Today Raymond opened up and ran shift. I will have him add some notes of what he saw and if he had any issues with anything. I came by in the early afternoon and I did let go of Jose Pozo. I let him know that we appreciate him showing up and that it was nothing personal, but in our boh we all depend on each other and work as a team and that this does not seem like a good fit for him. He had two weeks on line and retained nothing and it was obvious that he did not study or put in all his effort. We moved him to dish but he ended up wandering off when he would have down time and needed to be micromanaged hard for dish. He understood completely and so there was no issue with this sit down. I did get to look at some pizza being made. Will is doing better at Roto and he is getting better day by day. He really cares and it shows in his training. MONDAY 31st BOH

 Monday 10/31:Had office time with KM's. we had 7 doing orientation and they showed up. They will be put in schedule tomorrow by Kaylana but she has spoken with them as far as when to come in. Still seeing what is going on with Freezer. Looks like the sensor for the door had a surge go through it as the electrical for that sensor was fried. Brian from Bush Refrigeration is getting this fixed so we are not going to do any desserts except for the ices since we have a very small freezer that will fit those. Today after HR we are going to focus on those and the Sicilian Dough. Kaylana tightened up prep sheets and Raymond and Kaylana went through prep coolers to look at all product and toss out any product that is bad due to us not training on weekends so far which will be different moving forward on the schedule. Slowly getting Raymond and Kaylana into orders as well. Cynthia is training this week on salad sandwich as she has trained 2 days on prep so far and went to Austin to see HOME...
